Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups fresh ripe tomatoes, chopped (or 1 can of crushed tomatoes)
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • 1/2 cup fresh basil leaves, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened for about 3-4 minutes.
  2. Add the chopped tomatoes and vegetable broth, bringing the mixture to a simmer. Cook for about 20 minutes.
  3. Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a regular blender in batches.
  4. Stir in the heavy cream and chopped basil, seasoning with salt and pepper to taste. Heat through gently.
  5. Serve hot, garnished with additional basil if desired.

Notes

For a lighter soup, reduce the heavy cream or use whole milk. The soup can be paired with crusty bread or a grilled cheese sandwich.
