Ingredients

- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups fresh ripe tomatoes, chopped (or 1 can of crushed tomatoes)
- 1 cup vegetable broth
- 1 cup heavy cream
- 1/2 cup fresh basil leaves, chopped
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened for about 3-4 minutes.
- Add the chopped tomatoes and vegetable broth, bringing the mixture to a simmer. Cook for about 20 minutes.
- Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a regular blender in batches.
- Stir in the heavy cream and chopped basil, seasoning with salt and pepper to taste. Heat through gently.
- Serve hot, garnished with additional basil if desired.
Notes
For a lighter soup, reduce the heavy cream or use whole milk. The soup can be paired with crusty bread or a grilled cheese sandwich.
