Ingredients

1 lb boneless skinless chicken breasts, cut into cubes

2 tbsp olive oil

2 garlic cloves, minced

1 1/2 cups uncooked orzo

2 1/2 cups chicken broth

1/2 cup milk or cream

1/2 cup ricotta cheese

1/4 cup grated Parmesan cheese

1 cup spinach or kale (optional)

1 lemon (zest and juice)

Salt and black pepper to taste

Fresh basil or parsley for garnish


Instructions

1. Season chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat.

2. Add chicken and cook until golden brown and cooked through, about 5–6 minutes. Remove from skillet and set aside.

5. Reduce heat to low and stir in milk, ricotta, Parmesan, and lemon zest. Mix until creamy.

6. Add cooked chicken back into the skillet along with spinach (if using) and stir until warmed through.

7. Finish with lemon juice and garnish with fresh herbs. Serve hot and enjoy the magic!
