Ingredients

  • 1 lb chicken breasts (boneless and skinless)
  • 2 cups broccoli (chopped)
  • 1 cup grape tomatoes (halved)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 cup heavy cream
  • 4 cloves garlic (minced)
  • 2 teaspoons Italian seasoning
  • 1/2 cup Parmesan cheese (shredded)
  • 2 tablespoons olive oil
  • Salt and pepper (to taste)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, then add them to the skillet and cook for about 5-7 minutes on each side until golden brown.
  3. Remove the chicken from the skillet and let it rest on a plate.
  4. Add minced garlic and chopped broccoli to the skillet and sauté for about 3 minutes until the garlic is fragrant.
  5. Next, add halved grape tomatoes and chopped sun-dried tomatoes and cook for 2-3 minutes.
  6. Gradually whisk in heavy cream and Italian seasoning, stirring until the sauce thickens slightly.
  7. Return the chicken to the skillet, ensuring it’s well-coated with the sauce and vegetables. Simmer for another 3 minutes.
  8. Sprinkle shredded Parmesan cheese over the dish and allow it to melt before serving.

Notes

Serve over cauliflower rice or zoodles for a low-carb option. Enjoy with a simple green salad dressed in lemon vinaigrette.
