- 1 cup orzo pasta
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 1/4 cup freshly squeezed lemon juice
- 1 tbsp lemon zest
- 3 cloves garlic (minced)
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt to taste

Instructions
- Heat 2 tbsp olive oil in a large pot over medium-high heat.
- Add diced chicken to the pot and cook for 5-7 minutes until golden brown.
- Add minced garlic and sauté for 1 minute until fragrant.
- Pour in chicken broth and bring to a boil.
- Lower the heat, add orzo pasta, and let simmer for about 10 minutes.
- Stir in heavy cream, lemon juice, and lemon zest.
- Fold in spinach and Parmesan cheese, allowing spinach to wilt.
- Season with salt and pepper to taste.
- Serve warm with extra Parmesan and fresh herbs.
