  • 1 cup orzo pasta
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1/4 cup freshly squeezed lemon juice
  • 1 tbsp lemon zest
  • 3 cloves garlic (minced)
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat 2 tbsp olive oil in a large pot over medium-high heat.
  2. Add diced chicken to the pot and cook for 5-7 minutes until golden brown.
  3. Add minced garlic and sauté for 1 minute until fragrant.
  4. Pour in chicken broth and bring to a boil.
  5. Lower the heat, add orzo pasta, and let simmer for about 10 minutes.
  6. Stir in heavy cream, lemon juice, and lemon zest.
  7. Fold in spinach and Parmesan cheese, allowing spinach to wilt.
  8. Season with salt and pepper to taste.
  9. Serve warm with extra Parmesan and fresh herbs.
