  • 3 cups coarsely chopped baby spinach
  • 2 large lemons (1 tablespoon zest and 1/4 cup juice)

Instructions

  1. Begin by heating the olive oil in a large pot over medium heat. The oil should be hot but not smoking.
  2. Add the finely diced onion and sauté until softened, about 5 minutes.

  9. Remove the pot from heat. Stir in the Parmesan cheese, chopped spinach, lemon zest, and lemon juice.
