Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 cups chicken broth
  • 2 packs of ramen noodles
  • 1 cup fresh vegetables (bell peppers, carrots, spinach)
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Sauté the garlic in a large pot with olive oil.
  2. Cook the chicken breasts until golden brown.
  3. Add chicken broth and simmer for 10 minutes.
  4. Cook the ramen noodles according to package instructions.
  5. Stir in fresh vegetables and soy sauce, cooking for 2 more minutes.
  6. Add heavy cream and season with salt and pepper. Cook until thickened.
  7. Serve hot, garnished with chopped green onions.

Notes

For a lighter version, use low-fat milk instead of heavy cream.
