Creamy Garlic Butter Chicken Rotini: Ultimate Comfort Meal

Ingredients

2 tbsp butter

1 tbsp olive oil

1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)

1 tsp salt

1/2 tsp black pepper

1 tsp paprika

4 garlic cloves, minced

2 cups heavy cream

1/2 cup chicken broth

1 cup grated Parmesan cheese

8 oz rotini pasta (uncooked)

1 tbsp chopped parsley (for garnish)


Instructions

1. Cook rotini according to package directions; drain and set aside.

2. In a large skillet, melt butter with olive oil over medium heat.

3. Season chicken with salt, pepper, and paprika, then add to the skillet.

4. Cook until golden brown and cooked through, about 6–8 minutes; remove and set aside.

5. In the same skillet, add garlic and sauté for 30 seconds until fragrant.

6. Pour in heavy cream and chicken broth; stir and bring to a gentle simmer.

7. Whisk in Parmesan cheese until smooth and creamy.

8. Add cooked rotini and chicken back into the sauce, tossing to coat evenly.

9. Simmer 2–3 minutes to thicken.

10. Garnish with parsley and serve warm.

Notes

For extra flavor, stir in a handful of baby spinach or sun-dried tomatoes.

Use penne or fettuccine instead of rotini if preferred.

Leftovers reheat well with a splash of milk to loosen the sauce.
