Ingredients

  • 1 teaspoon olive oil
  • 8 ounces cream cheese (room temperature)
  • 1 cup sour cream
  • 4 ounces shredded mozzarella cheese
  • ½ cup grated parmesan cheese (divided)
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon fresh chopped parsley
  • Crostini or crackers (for serving)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare two heads of garlic, trimming the tops and drizzling with olive oil.
  3. Roast the garlic in foil for about 50 minutes until soft and fragrant.
  4. Cool the garlic before squeezing the cloves into a mixing bowl.
  5. Mash the garlic into a smooth paste.
  6. Mix in cream cheese and sour cream until smooth, then fold in mozzarella, half of the parmesan, salt, and pepper.
  7. Spread the mixture in a baking dish and top with the remaining parmesan.
  8. Bake at 350°F (175°C) for about 28 minutes until hot and bubbly.
  9. Garnish with fresh parsley before serving.
  10. Serve warm with crostini or crackers.
