- 2 heads garlic
- 1 teaspoon olive oil
- 8 ounces cream cheese (room temperature)
- 1 cup sour cream
- 4 ounces shredded mozzarella cheese
- ½ cup grated parmesan cheese (divided)
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 teaspoon fresh chopped parsley
- Crostini or crackers (for serving)
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare two heads of garlic, trimming the tops and drizzling with olive oil.
- Roast the garlic in foil for about 50 minutes until soft and fragrant.
- Cool the garlic before squeezing the cloves into a mixing bowl.
- Mash the garlic into a smooth paste.
- Mix in cream cheese and sour cream until smooth, then fold in mozzarella, half of the parmesan, salt, and pepper.
- Spread the mixture in a baking dish and top with the remaining parmesan.
- Bake at 350°F (175°C) for about 28 minutes until hot and bubbly.
- Garnish with fresh parsley before serving.
- Serve warm with crostini or crackers.
