Ingredients

  • 2 heads garlic
  • 1 teaspoon olive oil
  • 8 ounces cream cheese (room temperature)
  • 1 cup sour cream
  • 4 ounces shredded mozzarella cheese
  • ½ cup grated parmesan cheese (divided)
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon fresh chopped parsley (for garnish)
  • Crostini or crackers (for serving)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the garlic by trimming the tops and drizzling with olive oil, then wrap in aluminum foil.
  3. Roast the garlic in the oven for about 50 minutes until soft and golden brown.
  4. Cool the garlic, then squeeze it into a bowl and mash until smooth.
  5. Mix the mashed garlic with cream cheese and sour cream until smooth, then fold in mozzarella, half the parmesan, salt, and pepper.
  6. Transfer the mixture to a baking dish and spread evenly, topping with the remaining parmesan.
  7. Bake at 350°F (175°C) for about 28 minutes until hot and bubbly.
  8. Garnish with parsley and serve warm with crostini or crackers.
