Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 8 ounces cream cheese, softened
  • 68 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese (about 110 grams)
  • 1 packet ranch seasoning mix (about 1 ounce / 28 grams)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: chopped green onions or parsley for garnish

Instructions

  1. Cook the bacon until crisp in a skillet over medium heat (8-10 minutes). Transfer to paper towels to drain and crumble.
  2. Pat dry the chicken breasts with paper towels to ensure even cooking.
  3. In a bowl, mix cream cheese, ranch seasoning, garlic powder, onion powder, and season with salt and pepper.
  4. Place the chicken in the crockpot and spread the cream cheese mixture over it.
  5. Top with half of the cheddar cheese and crumbled bacon.
  6. Cover and cook on low for 6-7 hours or high for 3-4 hours until tender.
  7. 15 minutes before serving, add the remaining cheddar cheese and bacon, covering to melt.
  8. Shred the chicken in the crockpot, stir to combine with the sauce, and garnish with green onions or parsley if desired.

Notes

For a spicy twist, add buffalo sauce to the cream cheese mixture or try different cheeses.
