This Creamy Chicken & Wild Rice dish is the perfect blend of hearty, wholesome, and comforting flavors. Tender chicken, nutty wild rice, and a rich, velvety sauce come together to create a cozy, elevated dinner you’ll want to make again and again.
Ingredients
2 tbsp olive oil
1 lb boneless, skinless chicken breasts (or thighs), cut into cubes
1 small onion, diced
2 carrots, diced
2 celery stalks, chopped
3 garlic cloves, minced
1 cup uncooked wild rice blend
4 cups chicken broth
1 cup milk or half-and-half
2 tbsp flour
2 tbsp butter
1/2 tsp dried thyme
1/2 tsp rosemary
Salt and black pepper, to taste
Fresh parsley, for garnish
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add chicken and cook until lightly browned; remove and set aside.
3. In the same pot, add onion, carrots, and celery; sauté until softened, about 5 minutes.
4. Stir in garlic and cook for 1 minute until fragrant.
5. Add wild rice, thyme, rosemary, and chicken broth; bring to a boil.
6. Reduce heat, cover, and simmer for 35–40 minutes, until rice is tender.
7. In a separate saucepan, melt butter and whisk in flour to form a roux.
8. Gradually add milk, whisking until smooth and thickened.
9. Stir the cream mixture into the soup pot, along with the cooked chicken.
10. Simmer for another 5–10 minutes to blend flavors.
11. Season with salt and pepper, garnish with parsley, and serve warm.
Notes
Use rotisserie chicken for a quick shortcut.
For an extra creamy texture, substitute part of the broth with heavy cream.
Add mushrooms or spinach for added flavor and nutrition.
