Ingredients
4 tbsp unsalted butter
1 small onion, diced

1 cup carrots, shredded
2 cups sharp cheddar cheese, shredded
Salt and black pepper to taste

Instructions
1. In a large pot, melt butter over medium heat. Add diced onion and sauté until soft, about 4 minutes.
