- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 tsp baking powder
- 1 tsp baking soda

- 2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 cup vegetable oil
- 4 large eggs
- 3 cups grated carrots
- 1 cup chopped walnuts or pecans (optional)
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, mix the vegetable oil and eggs until smooth.
- Add grated carrots and optional nuts to the wet mixture and stir until well combined.
- Gently combine the wet ingredients with the dry ingredients without overmixing.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 25 to 30 minutes, checking for doneness with a toothpick.
- Let the bars cool completely in the pan.
- Prepare the frosting by beating the cream cheese, powdered sugar, and vanilla until smooth.
- Once cooled, frost the bars generously and cut into squares before serving.
Notes
