Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, mix grated carrots, granulated sugar, brown sugar, vegetable oil, eggs, and 1/2 teaspoon of vanilla extract until smooth.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt until no lumps remain.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until fully combined without over-mixing.
  5. Pour the batter into the prepared baking pan and spread evenly.
  6. Bake in the preheated oven for 25-30 minutes, checking doneness with a toothpick.
  7. In a mixing bowl, beat softened cream cheese, powdered sugar, and 1/2 teaspoon vanilla extract until smooth.
  8. Once the bars have cooled, spread the cream cheese layer evenly on top.
  9. Cut the bars into squares and serve. Optional: garnish with cinnamon or chopped nuts.
