Description

Ingredients

2 cups all-purpose flour

1 1/2 cups rolled oats

3/4 cup brown sugar, packed

1/2 cup granulated sugar

1 tsp baking powder

1/2 tsp salt

1 cup unsalted butter, melted

1 tsp vanilla extract

Cranberry Filling:

2 1/2 cups fresh or frozen cranberries

1/2 cup granulated sugar

1 tbsp cornstarch

1/4 cup orange juice

1 tsp orange zest

1/2 tsp cinnamon


Instructions

1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.

2. In a large bowl, combine flour, oats, brown sugar, granulated sugar, baking powder, and salt.

3. Add melted butter and vanilla extract; stir until the mixture resembles coarse crumbs.

4. Press two-thirds of the mixture into the bottom of the prepared pan to form the crust.

5. In a medium saucepan, combine cranberries, sugar, cornstarch, orange juice, orange zest, and cinnamon.

6. Cook over medium heat for 5–7 minutes, stirring frequently, until the cranberries burst and the mixture thickens.

7. Spread the cranberry filling evenly over the crust.

8. Sprinkle the remaining crumble mixture on top, gently pressing it down.

9. Bake for 30–35 minutes, or until golden brown and bubbly around the edges.

10. Cool completely before cutting into bars.

Notes

You can substitute raspberries or blueberries for the cranberries for a twist.

Add chopped pecans or walnuts to the crumble for extra crunch.
