- 4 cups chicken broth (low-sodium recommended)

- 2 tablespoons cornstarch (optional, for thickening)
- 2 tablespoons water (optional, for thickening)
Instructions
- Prep the vegetables: Start by peeling and dicing the potatoes, slicing the carrots, dicing the celery, and chopping the onion. Mince the garlic and set aside.
- Sauté the aromatics: Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes. Then, add the minced garlic and sauté for another minute until fragrant. Transfer this mixture to the slow cooker.
- Combine ingredients: In the slow cooker, toss in the diced chicken thighs, potatoes, sliced carrots, and diced celery. Pour in the chicken broth and stir everything to combine well.
- Season to taste: Add the dried thyme, dried rosemary, salt, pepper, and bay leaf to the slow cooker. This seasoning will elevate the flavor of your stew.
- Slow cook: Cover the slow cooker and set it to cook on low for 6-8 hours or on high for 4-5 hours. In the last 30 minutes, add the frozen peas.
- Thickening option: If you prefer a thicker stew, mix the cornstarch with water until smooth and stir it into the stew during the last moments of cooking.
- Finishing touches: Once the stew is done cooking, remove the bay leaf. Taste the stew and adjust the seasonings as needed. Serve warm, garnished with fresh herbs if desired.
