- 3 ripe bananas
- 1/3 cup melted butter
- 1 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1 tablespoon cinnamon
- 1/4 cup brown sugar
- 1 cup powdered sugar
- 2 tablespoons milk (or non-dairy alternative)
Instructions
- Preheat the oven to 350°F (175°C) and grease a standard loaf pan.
- Mash the bananas in a mixing bowl until smooth.
- Stir in melted butter, sugar, egg, and vanilla until well mixed.
- Add baking soda and salt, then sift in flour and mix gently until just combined.
- In a small bowl, combine cinnamon and brown sugar.
- Pour half of the batter into the greased pan, sprinkle half of the cinnamon mixture, followed by the remaining batter and cinnamon mixture.
- Swirl the mixture with a knife for the cinnamon roll effect.
- Bake for 60-65 minutes, checking doneness with a toothpick.
- Mix powdered sugar with milk to create the glaze.
- Cool the bread in the pan for 10-15 minutes, then drizzle glaze before slicing.

Store at room temperature for a couple of days, refrigerate for a week, or freeze for up to three months.
