- 2 cups mashed potatoes
- 1 cup cooked corned beef, shredded
- 1 cup cabbage, chopped
- 1/2 cup green onions, sliced
- 1/2 cup shredded cheese (cheddar or your choice)
- 1/2 cup milk
- Salt and pepper to taste
- 1 tablespoon butter
- Paprika for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Combine in a large bowl, the mashed potatoes, shredded corned beef, chopped cabbage, sliced green onions, shredded cheese, and milk.
- Season the mixture with salt and pepper to taste. Mix everything together thoroughly until well blended.
- Transfer the mixture into a greased casserole dish, spreading it evenly across the dish.
- Add butter to the top of the casserole and sprinkle paprika if desired.
- Bake for 25-30 minutes or until the casserole is golden and bubbly.
- Cool slightly before serving. Enjoy!
Notes
Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in the microwave or oven.
