A delightful blend of creamy mashed potatoes, savory corned beef, fresh cabbage, and green onions, baked to perfection with cheese on top.


Ingredients

  • 2 cups mashed potatoes
  • 1 cup cooked corned beef, shredded
  • 1 cup cabbage, chopped
  • 1/2 cup green onions, sliced
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/2 cup milk
  • Salt and pepper to taste
  • 1 tablespoon butter
  • Paprika for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine in a large bowl, the mashed potatoes, shredded corned beef, chopped cabbage, sliced green onions, shredded cheese, and milk.
  3. Season the mixture with salt and pepper to taste. Mix everything together thoroughly until well blended.
  4. Transfer the mixture into a greased casserole dish, spreading it evenly across the dish.
  5. Add butter to the top of the casserole and sprinkle paprika if desired.
  6. Bake for 25-30 minutes or until the casserole is golden and bubbly.
  7. Cool slightly before serving. Enjoy!
