Description

Deliciously creamy and cheesy broccoli cheese soup made right at home, similar to Panera’s classic.


Ingredients

  • 4 cups broccoli florets
  • 1 cup diced carrots
  • 1/2 cup diced onion
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 4 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Cook the diced onion and carrots until softened, about 4-5 minutes.
  3. Add the all-purpose flour and cook for an additional minute.
  4. Whisk in the chicken broth until simmering, about 3-4 minutes.
  5. Add the broccoli florets and cook until tender, about 10 minutes.
  6. Mix in the heavy cream and shredded cheese until melted and smooth.
  7. Season with salt and pepper to taste.

Notes

Serve with crusty bread or a fresh salad. For added richness, drizzle extra cream on top.
