Description
Deliciously creamy and cheesy broccoli cheese soup made right at home, similar to Panera’s classic.
Ingredients

- 4 cups broccoli florets
- 1 cup diced carrots
- 1/2 cup diced onion
- 1/2 cup butter
- 1/2 cup all-purpose flour
- 4 cups chicken broth
- 2 cups shredded cheddar cheese
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Melt the butter in a large pot over medium heat.
- Cook the diced onion and carrots until softened, about 4-5 minutes.
- Add the all-purpose flour and cook for an additional minute.
- Whisk in the chicken broth until simmering, about 3-4 minutes.
- Add the broccoli florets and cook until tender, about 10 minutes.
- Mix in the heavy cream and shredded cheese until melted and smooth.
- Season with salt and pepper to taste.
Notes
Serve with crusty bread or a fresh salad. For added richness, drizzle extra cream on top.
