- 1 cup jasmine rice
- 1 can (13.5 oz) coconut milk
- 1 cup pineapple chunks
- 1 cup water
- 1 tablespoon sugar
- 1/2 teaspoon salt
- Fresh cilantro (for garnish)
Instructions
- Rinse the jasmine rice under cold running water until the water runs clear.
- In a medium-sized saucepan, combine the coconut milk, water, sugar, and salt. Bring to a boil over medium heat.
- Once boiling, stir in the rinsed jasmine rice and pineapple chunks.
- Reduce heat to low, cover, and let simmer for 15-20 minutes.
- Once cooked, remove from heat and let sit covered for an additional 5 minutes.
- Fluff the rice with a fork and garnish with fresh cilantro before serving.
Notes
For added flavor, use fresh pineapple instead of canned. Adjust sweetness according to your preference.
