Description

A delightful side dish that combines Jasmine rice with creamy coconut milk and juicy pineapple chunks, bringing tropical flavors to your table.


Ingredients

  • 1 cup jasmine rice
  • 1 can (13.5 oz) coconut milk
  • 1 cup pineapple chunks
  • 1 cup water
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • Fresh cilantro (for garnish)

Instructions

  1. Rinse the jasmine rice under cold running water until the water runs clear.
  2. In a medium-sized saucepan, combine the coconut milk, water, sugar, and salt. Bring to a boil over medium heat.
  3. Once boiling, stir in the rinsed jasmine rice and pineapple chunks.
  4. Reduce heat to low, cover, and let simmer for 15-20 minutes.
  5. Once cooked, remove from heat and let sit covered for an additional 5 minutes.
  6. Fluff the rice with a fork and garnish with fresh cilantro before serving.

Notes

For added flavor, use fresh pineapple instead of canned. Adjust sweetness according to your preference.
