- 1/2 cup cream cheese, softened
- 1/4 cup lemon curd
- 1/2 teaspoon vanilla extract

- Zest of 1 lemon
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a baking sheet or line it with parchment paper.
- Cream together the butter and granulated sugar until smooth and fluffy.
- Add the cream cheese, vanilla extract, lemon zest, and lemon curd; mix until combined.
- Gradually add flour, coconut, and salt, and stir until a dough forms.
- Scoop spoonfuls of the dough onto the baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes until the edges are lightly golden.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
- Optionally, drizzle additional lemon curd over cookies before serving.
