Ingredients

  • 1 cup grated zucchini
  • 1 cup almond flour
  • 1/2 cup cocoa powder
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips (vegan)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a baking pan by lining it with parchment paper.
  3. Mix the dry ingredients: almond flour, cocoa powder, baking soda, and salt in a large bowl.
  4. Combine the wet ingredients: grated zucchini, maple syrup, melted coconut oil, sugar, and vanilla extract in another bowl.
  5. Gradually mix the wet ingredients into the dry ingredients until well combined.
  6. Add the dark chocolate chips and gently fold them into the batter.
  7. Pour the brownie mixture into the prepared baking pan and spread it evenly.
  8. Bake for 25-30 minutes until a toothpick inserted comes out clean or with a few moist crumbs.
  9. Cool in the pan for 10-15 minutes, then remove and let cool completely on a wire rack before cutting into squares.

Notes

Serve warm for a gooey texture, or with vegan ice cream for an indulgent treat. Store in an airtight container for up to a week or freeze for longer storage.
