Description

A hearty and comforting dish that combines the rich flavors of chicken pot pie with pasta, topped with melted cheddar cheese.

Ingredients

Scale
  • 8 oz pasta (penne or rotini)
  • 2 cups cooked chicken, shredded
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup cream of chicken soup
  • 1 cup chicken broth
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 teaspoon thyme
  • 1 cup shredded cheddar cheese

Instructions

  1. Cook the pasta according to the package instructions until it’s al dente. Drain and set aside.
  2. Prepare a large skillet over medium heat; combine shredded chicken, mixed vegetables, cream of chicken soup, chicken broth, and milk.
  3. Season the mixture with garlic powder, onion powder, thyme, salt, and pepper. Cook for 5 to 7 minutes until heated through.
  4. Combine the drained pasta with the skillet mixture, stirring to ensure the pasta is evenly coated.
  5. Add the shredded cheddar cheese and stir until melted and creamy.
  6. Serve warm, garnished with fresh herbs if desired.

Notes

Consider using rotisserie chicken for convenience and add your favorite vegetables in place of the mixed vegetables.
