  • 5 tbsp Butter, salted
  • 2 cups Cheddar cheese, shredded
  • 1 cup Half and half
  • 1 cup Milk

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add the chopped onion, minced garlic, and carrots; sauté until softened (5-7 minutes).
  3. Stir in the flour, paprika, black pepper, and salt; cook for an additional minute.
  4. Gradually add the vegetable broth while stirring to prevent lumps, and bring to a gentle simmer.
  5. Add broccoli florets and cook until tender (about 10 minutes).
  6. Reduce heat to low; stir in milk and half-and-half.
  7. Add shredded cheddar cheese, stirring until melted and creamy.
  8. Adjust seasoning if needed, then serve warm with crusty bread or crackers.

Notes

For a vegan version, replace butter with olive oil, use plant-based milk and cheese alternatives.
