- 1/2 cup Flour

- 1/2 tsp Salt
- 5 tbsp Butter, salted
- 2 cups Cheddar cheese, shredded
- 1 cup Half and half
- 1 cup Milk
Instructions
- Melt the butter in a large pot over medium heat.
- Add the chopped onion, minced garlic, and carrots; sauté until softened (5-7 minutes).
- Stir in the flour, paprika, black pepper, and salt; cook for an additional minute.
- Gradually add the vegetable broth while stirring to prevent lumps, and bring to a gentle simmer.
- Add broccoli florets and cook until tender (about 10 minutes).
- Reduce heat to low; stir in milk and half-and-half.
- Add shredded cheddar cheese, stirring until melted and creamy.
- Adjust seasoning if needed, then serve warm with crusty bread or crackers.
Notes
For a vegan version, replace butter with olive oil, use plant-based milk and cheese alternatives.
