Description

A hearty meal featuring tender chunks of beef in a rich, flavorful broth with vegetables, perfect for chilly days.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 4 medium potatoes, peeled and diced
  • 3 carrots, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat.
  2. Add the beef cubes to the pot and brown on all sides.
  3. Stir in the chopped onion and minced garlic; cook until the onion is softened, about 3-5 minutes.
  4. Add the tomato paste, dried thyme, bay leaf, salt, and pepper; stir well.
  5. Pour in the beef broth and bring to a boil, then reduce the heat.
  6. Cover and let it simmer for 90-120 minutes.
  7. Add the diced potatoes and sliced carrots; cover and cook for an additional 30-40 minutes until the vegetables are tender.
  8. Remove the bay leaf, taste, and adjust seasoning if needed; serve warm.

Notes

Serve with fresh herbs and crusty bread. Leftovers can be refrigerated for 3-4 days or frozen for up to 3 months.
