Ingredients
3 ripe bananas, mashed
1/2 cup unsalted butter, melted
3/4 cup brown sugar
2 large eggs
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon (optional)
1/2 cup sour cream or Greek yogurt
1/2 cup chopped walnuts or chocolate chips (optional)
Instructions
1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
2. In a large mixing bowl, mash bananas until smooth.
3. Whisk in melted butter, brown sugar, eggs, and vanilla until combined.
4. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
5. Add dry ingredients to the wet mixture, stirring just until combined.
6. Fold in sour cream and nuts or chocolate chips if using.
7. Pour batter into the prepared loaf pan and smooth the top.
8. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Use extra-ripe bananas with brown spots for the best flavor and moisture.
