Ingredients
4 cups mixed greens (arugula, spinach, or spring mix)
2 oranges, peeled and segmented
1 grapefruit, peeled and segmented
1 avocado, sliced
1/4 small red onion, thinly sliced
1/4 cup toasted almonds or pistachios
2 tbsp crumbled feta or goat cheese (optional)
**For the dressing:**
3 tbsp olive oil
2 tbsp fresh lime juice
1 tbsp honey or maple syrup
1 tsp Dijon mustard
Salt and black pepper to taste
Instructions
1. In a small bowl or jar, whisk together olive oil, lime juice, honey, Dijon mustard, salt, and pepper until smooth.
2. Arrange greens in a large salad bowl or platter.
