Ingredients
2 tbsp olive oil
1 onion, chopped
3 garlic cloves, minced
2 carrots, sliced
2 celery stalks, diced
2 potatoes, cubed
1 zucchini, chopped
1 red bell pepper, diced
1 cup green beans, cut into 1-inch pieces
1 can (14 oz) diced tomatoes
4 cups vegetable broth
1 tbsp tomato paste
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper to taste
Fresh parsley for garnish
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add onion, garlic, carrots, and celery; sauté until softened.
3. Stir in tomato paste, thyme, rosemary, salt, and pepper.
4. Add potatoes, zucchini, bell pepper, and green beans; mix well.
5. Pour in diced tomatoes and vegetable broth; bring to a boil.
6. Reduce heat, cover, and simmer for 25–30 minutes, stirring occasionally, until vegetables are tender.
7. Adjust seasoning to taste.
8. Garnish with fresh parsley and serve hot.
