1 cup pitted dates, chopped

1 cup boiling water

1 tsp baking soda

1/2 cup unsalted butter, softened

3/4 cup brown sugar

2 large eggs

1 tsp vanilla extract

1 cup all-purpose flour

1/4 cup cocoa powder

1 tsp baking powder

1/4 tsp salt

Toffee Sauce:

1/2 cup unsalted butter

3/4 cup brown sugar

1 cup heavy cream

1 tsp vanilla extract

Pinch of salt


Instructions

1. Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish.

2. Combine chopped dates, boiling water, and baking soda; let sit for 10 minutes.

3. In a bowl, cream butter and brown sugar until light and fluffy.

4. Add eggs one at a time, then mix in vanilla.

5. Puree the date mixture until mostly smooth and stir into the batter.

6. In a separate bowl, whisk flour, cocoa powder, baking powder, and salt.

7. Fold dry ingredients into wet mixture until just combined.

8. Pour batter into prepared dish and bake for 30–35 minutes until set.

9. For the toffee sauce, melt butter in a saucepan over medium heat.

10. Stir in brown sugar and cream; simmer for 5–7 minutes until thickened.

11. Remove from heat and stir in vanilla and salt.

12. Pour warm toffee sauce over pudding and serve immediately.

Notes
