- 1 1/2 cups dark chocolate chips
- 1 Tbsp coconut oil
- 1/2 cup creamy natural peanut butter
- 1 cup puffed quinoa, brown rice crisps, or finely chopped nuts
- 2 Tbsp maple syrup or honey
- 1/2 tsp vanilla extract
- 1 pinch sea salt
Instructions
- Melt the dark chocolate chips and coconut oil together in a microwave-safe bowl.
- Prepare a mini muffin tin lined with paper liners.
- Set the chocolate base by scooping about 1 teaspoon of melted chocolate into each liner and freeze for 5 minutes.
- Mix creamy peanut butter, maple syrup (or honey), vanilla extract, and a pinch of sea salt in a bowl until smooth.
- Add your choice of crunchy ingredient and fold it into the peanut butter mixture.
- Fill each cup with the peanut butter mixture and press it down gently.
- Cover the filling with remaining melted chocolate and smooth it out.
- Freeze the cups for 15 to 20 minutes or refrigerate for 30 minutes until firm.
- Serve them immediately or store in the fridge in an airtight container.
