Ingredients

  • 1 and 1/2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder

  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup heavy cream (for ganache)
  • 8 ounces semisweet chocolate (for ganache)
  • 1 cup butter (for frosting)
  • 4 cups powdered sugar (for frosting)
  • 1/4 cup unsweetened cocoa powder (for frosting)
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a cupcake tin with paper liners.
  2. Combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl. Mix well to ensure all ingredients are evenly distributed.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix at medium speed for 2 minutes until the batter is smooth and well combined.
  4. Stir in the boiling water carefully. This step creates a thin batter, which is normal, and helps keep the cupcakes moist.
  5. Fill each cupcake liner about 2/3 full with the batter.
  6. Bake in the preheated oven for 20-25 minutes. Check for doneness by inserting a toothpick into the center of a cupcake. If it comes out clean, they are ready!
  7. Let the cupcakes cool in the tin for a few minutes before transferring them to a wire rack. Allow them to cool completely before frosting.
  8. Heat the heavy cream in a saucepan until it comes to a boil. Pour the hot cream over the chopped semisweet chocolate in a bowl. Let it sit for a few minutes and then stir until smooth for the ganache.
  9. Beat the butter in a bowl until creamy. Gradually add the powdered sugar and cocoa powder, mixing until fluffy. Then, add the vanilla extract and mix until well combined for the frosting.
  10. Fill each cupcake with a teaspoon of the ganache and then frost each with the chocolate frosting. Serve and enjoy!

Notes

For variations, consider adding mint extract, nuts, or fresh fruit as toppings.
