- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup chocolate chips
- 4 oz cream cheese, softened
- 2 tbsp sugar
- 1/2 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, beat together cream cheese, 2 tablespoons of sugar, and 1/2 teaspoon vanilla extract until smooth. Chill the mixture in the refrigerator.
- Cream together the softened butter, brown sugar, and white sugar until light and fluffy. Add the egg and remaining vanilla extract; mix well.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients, mixing until just combined.
- Fold in the chocolate chips.
- Take about 1 tablespoon of cookie dough, flatten it slightly, place 1 teaspoon of cheesecake filling in the center, and cover with more dough. Roll into a ball.
- Place on the baking sheet, leaving space between them, and bake for 10-12 minutes or until edges are golden brown.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
Serve warm for the best experience. Optionally drizzle with chocolate or caramel sauce before serving.
