Ingredients

  • 4 chicken thighs
  • 1/4 cup chipotle honey sauce
  • 2 cups potatoes, peeled and cubed
  • 1/2 cup smoked gouda cheese, shredded
  • 1/4 cup milk
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Marinate the chicken thighs in chipotle honey sauce for at least 30 minutes.
  3. Arrange marinated chicken thighs on a baking sheet and bake for 25 to 30 minutes.
  4. While the chicken bakes, boil cubed potatoes in salted water until tender (15-20 minutes).
  5. Drain the potatoes and combine them with smoked gouda, milk, and butter; mash until creamy.
  6. Season the mashed potatoes with salt and pepper.
  7. Plate the smoked gouda mashed potatoes and top with baked chicken thighs, drizzling extra sauce over chicken if desired.
