Ingredients

  • 1 ½ lbs boneless, skinless chicken breasts
  • 1 bell pepper (any color, chopped into 3/4-inch pieces)
  • 1 zucchini (chopped into 3/4-inch pieces)
  • 1 yellow squash (chopped into 3/4-inch pieces)
  • 1 ½ cups broccoli florets
  • ½ yellow onion (chopped into 3/4-inch pieces)
  • 3 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp paprika

Instructions

  1. Preheat the oven to 400℉ (200℃).
  2. Line a large baking sheet with parchment paper.
  3. Add the chicken breasts, chopped bell pepper, zucchini, yellow squash, broccoli florets, and chopped onion to a large bowl.
  4. Drizzle the olive oil over the mixture.
  5. Sprinkle the Italian seasoning, onion powder, garlic powder, black pepper, and paprika over the chicken and veggies.
  6. Stir everything together until evenly coated.
  7. Pour the mixture onto the prepared baking sheet.
  8. Bake in the preheated oven for about 20-25 minutes.
  9. Check the internal temperature of the chicken to ensure it reaches at least 165℉ (74℃).
  10. Let it rest for a couple of minutes before serving.
