- 1 lb chicken breasts, cubed
- 2 cups rice (white or brown)
- 4 cups chicken broth
- 1 cup cream of mushroom soup
- 1 cup mixed vegetables (peas, carrots, corn)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 cup shredded cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare a large casserole dish with cubed chicken, rice, chicken broth, cream of mushroom soup, mixed vegetables, chopped onion, minced garlic, salt, pepper, and paprika.
- Mix all the ingredients well.
- Cover the dish with aluminum foil and bake for 45 minutes.
- Stir the mixture and add shredded cheese if desired.
- Bake uncovered for an additional 15-20 minutes until the cheese is bubbly.
- Check for doneness; the chicken should be fully cooked and rice tender.
