Ingredients
2 cups cooked shredded chicken
1 cup uncooked long-grain white rice
1 can (10.5 oz) cream of chicken soup
1 can (10.5 oz) cream of mushroom soup
1 1/2 cups chicken broth
1 cup milk
1 cup shredded cheddar cheese
1 small onion, finely chopped
1 cup frozen peas and carrots (optional)
1 tsp garlic powder
1/2 tsp black pepper
1/2 tsp salt
1 tbsp butter, melted
Fresh parsley, for garnish
Instructions
1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
2. In a large bowl, combine uncooked rice, both soups, chicken broth, milk, onion, garlic powder, salt, and pepper. Mix well.
3. Stir in shredded chicken, cheese, and frozen peas and carrots (if using).
4. Pour the mixture into the prepared baking dish and spread evenly.
5. Drizzle melted butter over the top and cover with foil.
6. Bake for 50–55 minutes, or until rice is tender and most of the liquid has absorbed.
7. Remove foil, stir gently, and bake uncovered for another 10 minutes to brown the top.
8. Garnish with fresh parsley and serve warm.
Notes
Use rotisserie chicken for a quick and flavorful shortcut.
Swap cream of mushroom for cream of celery if preferred.
Add a sprinkle of crispy fried onions or breadcrumbs on top for extra crunch.
