- 1.5 lbs boneless skinless chicken breasts, sliced into cutlets
- 1 wheel (5.2 oz) Boursin Garlic & Fine Herbs cheese
- 0.75 cup chicken broth
- 1 tbsp olive oil
- 1 tbsp butter
- 0.5 tsp salt
- 0.25 tsp black pepper
- Fresh parsley or chives for garnish (optional)
Instructions
- Prepare the chicken: Season the chicken cutlets with salt and black pepper.
- Sear the chicken: In a skillet, heat the olive oil and butter over medium-high heat. Cook the seasoned chicken cutlets for about 4 to 5 minutes on each side until golden brown.
- Make the sauce: Reduce heat to medium-low, pour in the chicken broth, and scrape the bottom of the skillet.
- Add Boursin cheese: Crumble the cheese into the skillet and whisk it with the broth until melted and creamy.
- Reheat chicken: Return the cutlets to the skillet, spoon the sauce over them, and allow to simmer for a minute.
- Garnish and serve: Garnish with parsley or chives and serve immediately over pasta, rice, or vegetables.
