Ingredients

1 lb boneless, skinless chicken breasts, thinly sliced

2 tbsp soy sauce

1 tbsp cornstarch

1 tbsp vegetable oil

2 cups fresh green beans, trimmed

1 red bell pepper, sliced

2 cloves garlic, minced

1 tsp fresh ginger, grated

Sauce:

3 tbsp soy sauce

2 tbsp oyster sauce

1 tbsp hoisin sauce

1 tsp sesame oil

1 tbsp rice vinegar

1 tbsp honey

1/4 cup chicken broth

1 tsp cornstarch (for thickening)


Instructions

1. In a medium bowl, combine chicken with soy sauce and cornstarch; mix well and let marinate for 10 minutes.

2. In a small bowl, whisk together all sauce ingredients; set aside.

3. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.

4. Add marinated chicken and stir-fry until golden and cooked through, about 5–6 minutes. Remove from skillet and set aside.

5. In the same pan, add green beans and red bell pepper; stir-fry for 3–4 minutes until tender-crisp.

6. Add garlic and ginger; cook for 30 seconds until fragrant.

7. Return the chicken to the pan and pour in the sauce mixture.

8. Stir well and cook for another 2–3 minutes, allowing the sauce to thicken and coat the chicken and vegetables.

9. Serve hot over steamed rice or noodles.

Notes

For extra crunch, add cashews or sliced almonds before serving.

Use tamari instead of soy sauce for a gluten-free version.
