- 1 pound ground beef
- 1 packet taco seasoning
- Water, as directed on taco seasoning packet
- 8-ounce bag Mexican shredded cheese
- Optional toppings: pico de gallo, guacamole, sour cream
Instructions
- Prepare the Potatoes: Start by washing and peeling the russet potatoes. After peeling, chop them into small, even-sized cubes.
- Season the Potatoes: In a large bowl, toss the diced potatoes with the oil, salt, pepper, garlic powder, and onion powder.
- Air Fry the Potatoes: Preheat your air fryer to 400°F (200°C) and cook the seasoned potatoes for 18-20 minutes, shaking the basket 2-3 times.
- Cook the Ground Beef: Heat a skillet over medium heat, add ground beef and cook until browned. Drain excess grease.
- Add Taco Seasoning: Stir in taco seasoning and the directed amount of water. Cook until the mixture is thick.
- Assemble the Dish: Layer the cooked potatoes, top with seasoned beef, and sprinkle shredded Mexican cheese.
- Garnish: Add your choice of toppings like pico de gallo, guacamole, or sour cream.

For a vegetarian option, use a meat substitute or black beans instead of ground beef.
