Ingredients

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked white rice
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • 1/2 cup milk or beef broth
  • 2 cups shredded cheddar cheese (divided)
  • 1 tsp paprika
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9×13-inch baking dish and lightly grease it.
  3. Cook the beef and onion in a large skillet over medium heat until the beef is browned and the onion is soft, about 5-7 minutes.
  4. Add the minced garlic and cook for an additional 30 seconds.
  5. Mix together the cream of mushroom soup and milk or beef broth in a separate bowl, then add paprika, salt, and pepper.
  6. Combine the cooked rice, beef mixture, half of the shredded cheese, and sauce in the prepared baking dish.
  7. Top the casserole with the remaining cheese.
  8. Bake covered with foil for 20 minutes, then uncover and bake for an additional 10 minutes.
  9. Serve hot, garnished with chopped parsley if desired.
