- 1 lb lean ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups cooked white rice
- 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
- 1/2 cup milk or beef broth
- 2 cups shredded cheddar cheese (divided)
- 1 tsp paprika
- Salt and pepper to taste
- Optional: chopped parsley for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare a 9×13-inch baking dish and lightly grease it.
- Cook the beef and onion in a large skillet over medium heat until the beef is browned and the onion is soft, about 5-7 minutes.
- Add the minced garlic and cook for an additional 30 seconds.
- Mix together the cream of mushroom soup and milk or beef broth in a separate bowl, then add paprika, salt, and pepper.
- Combine the cooked rice, beef mixture, half of the shredded cheese, and sauce in the prepared baking dish.
- Top the casserole with the remaining cheese.
- Bake covered with foil for 20 minutes, then uncover and bake for an additional 10 minutes.
- Serve hot, garnished with chopped parsley if desired.
