- 6 ounces boneless skinless chicken, cut into bite-sized pieces
- 4 bell peppers, sliced
- 1 small onion, sliced
- 1 package fajita seasoning mix
- 1 cup sour cream
- 4 ounces cream cheese, softened
- 2 cups cheddar cheese, grated
- To taste optional toppings: avocado, guacamole, sour cream, salsa
Instructions
- Preheat your oven to 350°F to get it nice and warm.
- Heat olive oil in a skillet over medium heat. Add the chicken and cook until fully cooked and golden, about 5-7 minutes. Set aside.
- Add sliced onions and bell peppers to the same skillet. Sauté until tender, about 5 minutes.
- Return the cooked chicken to the skillet with the vegetables. Stir in fajita seasoning, sour cream, and softened cream cheese until well combined.
- Spread the mixture in a baking dish and top with grated cheddar cheese. Bake for 10-15 minutes until bubbly and golden.
