A delightful twist on classic Irish soda bread, combining sharp white cheddar cheese and fresh chives for a delicious and hearty bread.
Ingredients

- 4 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1.5 cups sharp white cheddar cheese, freshly shredded
- 0.25 cup fresh chives, finely chopped
- 1.75 cups cold buttermilk
- 2 tbsp melted butter (for brushing)
- Pinch of garlic powder (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Line a baking sheet with parchment paper or grease a cast-iron skillet.
- Whisk together the flour, baking soda, and salt until well combined.
- Stir in the cheddar cheese and chopped chives.
- Create a well in the center and add the cold buttermilk; stir until a shaggy dough forms.
- Turn the dough out onto a floured surface and shape it into a round loaf.
- Transfer the loaf to the prepared pan and score a deep ‘X’ on top.
- Bake in the preheated oven for 30–35 minutes until golden brown and hollow-sounding when tapped.
- Brush with melted butter in the last 5 minutes of baking.
- Cool on a wire rack for at least 15 minutes before slicing.
Notes
Serve warm with butter or cream cheese. It’s perfect with soups or as a snack. Store in an airtight container for up to 3 days or freeze for longer storage.
