Description

A delightful twist on classic Irish soda bread, combining sharp white cheddar cheese and fresh chives for a delicious and hearty bread.


Ingredients

  • 4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1.5 cups sharp white cheddar cheese, freshly shredded
  • 0.25 cup fresh chives, finely chopped
  • 1.75 cups cold buttermilk
  • 2 tbsp melted butter (for brushing)
  • Pinch of garlic powder (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Line a baking sheet with parchment paper or grease a cast-iron skillet.
  3. Whisk together the flour, baking soda, and salt until well combined.
  4. Stir in the cheddar cheese and chopped chives.
  5. Create a well in the center and add the cold buttermilk; stir until a shaggy dough forms.
  6. Turn the dough out onto a floured surface and shape it into a round loaf.
  7. Transfer the loaf to the prepared pan and score a deep ‘X’ on top.
  8. Bake in the preheated oven for 30–35 minutes until golden brown and hollow-sounding when tapped.
  9. Brush with melted butter in the last 5 minutes of baking.
  10. Cool on a wire rack for at least 15 minutes before slicing.

Notes

Serve warm with butter or cream cheese. It’s perfect with soups or as a snack. Store in an airtight container for up to 3 days or freeze for longer storage.
