Description

A hearty and flavorful casserole featuring lean ground beef, colorful veggies, creamy sauces, and cheesy goodness, perfect for weeknight dinners or gatherings.


Ingredients

  • 1.5 pounds Lean Ground Beef
  • 1 Red Bell Pepper, seeded and chopped
  • 1 Yellow Onion, chopped
  • 1 ounce Taco Seasoning Mix
  • 2 ½ cups Biscuit Mix, like Bisquick
  • 1 cup Water
  • Cooking Spray, like Pam
  • ½ cup Sour Cream
  • ½ cup Mayonnaise
  • 4 ounces Diced Green Chiles, drained
  • 1 ½ cups Cheddar Cheese, Fiesta Blend, shredded, divided
  • 1 teaspoon Garlic Powder
  • ½ cup Salsa, mild

Instructions

  1. Preheat the oven to 350℉ (175℃).
  2. Cook the ground beef in a large skillet over medium-high heat until it’s no longer pink (about 5-7 minutes). Drain excess fat.
  3. Combine biscuit mix and water in a medium bowl to form a dough.
  4. Coat a casserole dish with cooking spray and press the dough into the dish evenly. Bake for 5-8 minutes until set and golden.
  5. Add onions and red bell pepper to the skillet with the beef and cook for about 4 minutes until softened. Stir in taco seasoning.
  6. Spread the beef mixture over the baked biscuit layer.
  7. Mix sour cream, mayonnaise, green chiles, ¾ cup cheese, and garlic powder in another bowl, then spread over the beef layer.
  8. Add dollops of salsa on top and sprinkle with remaining cheese.
  9. Bake uncovered for 30 minutes until hot and bubbly.
  10. Let cool slightly before serving.

Notes

Garnish with parsley or serve with extra sour cream. Store leftovers in the refrigerator for 3-4 days or freeze for 2-3 months.
