- 1/2 cup creamy cashew butter (unsweetened)
- 2 Tbsp maple syrup
- 1 Tbsp coconut flour
- 1/2 tsp vanilla extract
- 1 pinch sea salt
Instructions
- Prepare the muffin tin: Line a mini muffin tin with 12 paper liners.
- Melt the chocolate: In a microwave-safe bowl, combine dark chocolate chips and coconut oil, heating in 30-second intervals until smooth.
- Create the chocolate base: Add 1 to 2 teaspoons of melted chocolate into each liner and spread slightly up the sides. Freeze for 5 to 10 minutes.
- Make the cashew filling: Mix cashew butter, maple syrup, vanilla extract, sea salt, and coconut flour in a small bowl until smooth.
- Fill the chocolate shells: Spoon about 1 teaspoon of cashew mixture into each chocolate base.
- Cover with chocolate: Spoon remaining melted chocolate over the cashew filling, smoothing the tops.
- Set and chill: Freeze for another 15 to 20 minutes or refrigerate for about 30 minutes until firm.
