  • 1 cup granulated sugar
  • 1 cup grated carrots
  • 1/2 cup chopped walnuts or pecans
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a jelly roll pan with parchment paper.
  2. Mix the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a medium bowl.
  3. Beat the eggs and granulated sugar in a large mixing bowl until thick and pale (about 3-5 minutes).
  4. Combine the dry ingredients with the egg mixture gradually until just mixed.
  5. Add the grated carrots and nuts, gently folding them in.
  6. Spread the batter into the prepared jelly roll pan evenly.
  7. Bake for 13-15 minutes, until golden brown and a toothpick comes out clean.
  8. Prepare a clean kitchen towel dusted with powdered sugar.
  9. Invert the baked cake onto the towel, peeling off the parchment paper.
  10. Roll the cake using the towel and let it cool completely.
  11. Make the filling by beating cream cheese, unsalted butter, powdered sugar, and vanilla until smooth.
  12. Unroll the cooled cake and spread the cream cheese filling evenly.
  13. Re-roll the cake without the towel, wrap in plastic, and refrigerate for at least 1 hour before serving.
