- 1 cup grated carrots

- 2 cups powdered sugar

Instructions
- Preheat your oven to 350°F (175°C) and prepare a jelly roll pan with parchment paper.
- Mix the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a medium bowl.
- Beat the eggs and granulated sugar in a large mixing bowl until thick and pale (about 3-5 minutes).
- Combine the dry ingredients with the egg mixture gradually until just mixed.
- Add the grated carrots and nuts, gently folding them in.
- Spread the batter into the prepared jelly roll pan evenly.
- Bake for 13-15 minutes, until golden brown and a toothpick comes out clean.
- Prepare a clean kitchen towel dusted with powdered sugar.
- Invert the baked cake onto the towel, peeling off the parchment paper.
- Roll the cake using the towel and let it cool completely.
- Make the filling by beating cream cheese, unsalted butter, powdered sugar, and vanilla until smooth.
- Unroll the cooled cake and spread the cream cheese filling evenly.
- Re-roll the cake without the towel, wrap in plastic, and refrigerate for at least 1 hour before serving.
