Instructions
- Preheat the oven to 350°F (175°C). Grease a 15×10 inch jelly roll pan and line it with parchment paper.
- Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a large mixing bowl.
- Beat the eggs and sugar together until thick and light in color.
- Stir in the grated carrots and 1 teaspoon of vanilla extract.
- Mix in the dry ingredients gradually until just combined.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 15-20 minutes until the center springs back when touched.
- Roll the cake while warm using the parchment paper and let it cool completely.
- Beat the cream cheese and butter until creamy, then gradually add the powdered sugar and remaining vanilla extract.
- Unroll the cooled cake, spread the frosting, and roll it back up.
