  • 1 cup grated carrots

  • 1/4 cup butter
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 15×10 inch jelly roll pan and line it with parchment paper.
  2. Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a large mixing bowl.
  3. Beat the eggs and sugar together until thick and light in color.
  4. Stir in the grated carrots and 1 teaspoon of vanilla extract.
  5. Mix in the dry ingredients gradually until just combined.
  6. Pour the batter into the prepared pan and spread it evenly.
  7. Bake for 15-20 minutes until the center springs back when touched.
  8. Roll the cake while warm using the parchment paper and let it cool completely.
  9. Beat the cream cheese and butter until creamy, then gradually add the powdered sugar and remaining vanilla extract.
  10. Unroll the cooled cake, spread the frosting, and roll it back up.
