Ingredients
1 cup couscous
3 large shallots, thinly sliced
2 tbsp olive oil
1 tbsp butter
1 tsp honey
1/2 cup crumbled feta cheese
1/4 cup toasted pine nuts or almonds
1/4 cup chopped parsley
Juice of 1 lemon
Salt and black pepper to taste
Optional: 1/4 cup dried cranberries or pomegranate seeds
Instructions
1. Prepare couscous according to package instructions. Fluff with a fork and set aside to cool slightly.
2. In a skillet, heat olive oil and butter over medium heat. Add shallots and cook for 10–12 minutes, stirring often, until deeply golden and caramelized.
3. Drizzle honey over the shallots, stir, and cook for another minute.
4. In a large bowl, combine couscous, caramelized shallots, feta, pine nuts, parsley, and optional cranberries or pomegranate.
5. Add lemon juice, salt, and pepper to taste, then toss everything together.
6. Serve warm or chilled as a main or side — it’s delicious either way!
