Ingredients
1 medium butternut squash, peeled and cubed
2 tbsp olive oil
1 tbsp honey
1/2 tsp smoked paprika
Salt and pepper to taste
1/3 cup crumbled feta cheese
1 tbsp chopped fresh parsley
1 tsp balsamic glaze (optional)
Instructions
1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. Toss butternut squash cubes with olive oil, honey, smoked paprika, salt, and pepper.
3. Spread evenly on the baking sheet in a single layer.
4. Roast for 25–30 minutes, stirring halfway through, until golden and caramelized.
5. Transfer roasted squash to a serving bowl and sprinkle with crumbled feta.
6. Drizzle with balsamic glaze and garnish with fresh parsley before serving warm.
Notes
Add toasted walnuts or pumpkin seeds for extra crunch.
For a spicy kick, sprinkle with chili flakes before roasting.
