Ingredients
1 medium butternut squash, peeled and sliced into 1/2-inch rounds
2 tbsp olive oil or melted butter
1 tbsp maple syrup or honey (optional)
Salt and freshly ground black pepper, to taste

Instructions
1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Peel and slice the butternut squash into uniform 1/2-inch rounds.
3. Toss the rounds with olive oil (or butter), maple syrup, salt, and pepper.
4. Arrange in a single layer on the baking sheet.
5. Roast for 25–30 minutes, flipping halfway through, until caramelized and tender.
