Description

A refreshing twist on the traditional Caprese salad with cucumber, cherry tomatoes, and mozzarella, perfect for warm weather.


Ingredients

  • 2 cups cherry tomatoes, halved
  • 1 large cucumber, thinly sliced into half moons
  • 1 cup fresh mozzarella balls (bocconcini), halved
  • 1/4 cup fresh basil leaves, torn
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze
  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a large bowl, combine the halved cherry tomatoes, cucumber slices, and mozzarella balls.
  2. Gently toss the mixture with extra virgin olive oil, salt, and freshly ground black pepper.
  3. Add the torn basil leaves and mix gently.
  4. Transfer to a serving dish and drizzle balsamic glaze over the top.
  5. Serve immediately or refrigerate for 15-30 minutes to let flavors meld.

Notes

Best enjoyed fresh. Store in an airtight container in the refrigerator for 1-2 days.
