A refreshing twist on the traditional Caprese salad with cucumber, cherry tomatoes, and mozzarella, perfect for warm weather.
Ingredients

- 2 cups cherry tomatoes, halved
- 1 large cucumber, thinly sliced into half moons
- 1 cup fresh mozzarella balls (bocconcini), halved
- 1/4 cup fresh basil leaves, torn
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic glaze
- Salt and freshly ground black pepper, to taste
Instructions
- In a large bowl, combine the halved cherry tomatoes, cucumber slices, and mozzarella balls.
- Gently toss the mixture with extra virgin olive oil, salt, and freshly ground black pepper.
- Add the torn basil leaves and mix gently.
- Transfer to a serving dish and drizzle balsamic glaze over the top.
- Serve immediately or refrigerate for 15-30 minutes to let flavors meld.
Notes
Best enjoyed fresh. Store in an airtight container in the refrigerator for 1-2 days.
